A common formula is:
Beginning inventory + food purchases – ending inventory = cost of goods sold
Then we take that number and compare it with food sales.

Let’s use simple numbers.

So the food used is:
$5,000 + $12,000 – $4,000 = $13,000
If the café sold $40,000 in food, the food cost percentage is:
$13,000 ÷ $40,000 = 32.5%

Is A High Food Cost Bad?
Not always. This is where we need to be fair.
A steakhouse may have a higher food cost than a coffee shop. A sushi restaurant may spend more on ingredients than a sandwich shop. A bakery may have low ingredient costs but high labor.
So there is no magic number for every business. Many restaurants aim for a range around the high 20s to mid 30s, but the right number depends on the concept.
